lentil mushroom lettuce wraps

lentils are the epitome of the perfect plant based protein source. say “perfect plant based protein” ten time.

one cup of cooked lentils contains 230 calories, 18 grams of protein, 1 gram of fat, and 16 grams of fiber. i’ll take a lentil bit more.

another plant based staple? the lettuce wrap. with their light, crisp, and refreshing flavor combined with endless choices of toppings, it’s a no brainer. you simply need protein + yummy sauce + crunchy veggies and it’s a wrap.  try my southwest quinoa salad in a lettuce boat too rather than an avocado too!

i used bibb lettuce because it’s my favorite. but romaine hearts or even endive boats would be delicious as well. they all beat bread or tortillas.

to make a substantial base, i added mushroom and spinach. but the shining star of the lettuce wrap was the sauce. i had the lentil and mushroom simmer in it for a bit to absorb the flavor.

 

the sauce combines Bragg liquid aminos, agave nectar, sesame, ginger and a bit of Fix hot sauce which i LOVE. you can find it here.

// what you need //

serves 2-3

’bout that base

2 cups of cooked lentils

1 pint of bella mushrooms – diced

2 cloves garlic

2 tbsp. extra virgin olive oil

2 cups fresh spinach

gettin’ saucy

1/2 cup Bragg liquid aminos

1/2 – 1 tbsp. Fix sriracha

1.5 tsp. agave nectar

1-2 tbsp. ground ginger – (or 1 in. fresh piece diced)

1 tbsp. sesame seeds

the fixin’s

1/2 english cucumber – in thin slices

1 red bell pepper julienned

1 cup shredded carrots

sesame seeds

scallions

// here’s how //

first, add minced garlic and olive oil to pan and allow to simmer. add lentils and mushrooms. cook, stirring occasionally.while mushrooms and lentils simmer, add sauce ingredients and stir.

cook for about 5-8 minutes while flavors combine.

right before removing from heat, add spinach and allow to wilt.while cooking base, prepare the toppings and wash bibb leaves.spoon lentil base onto the lettuce leaves

add toppings and garnishes of choice. serve immediately. enjoy!!

    Lentils are absolutely delicious and so versatile too. Did you know I found a chocolate lentil porridge recipe?? This lettuce wraps recipe sounds perfect for dinner! I even prefer lettuce wraps over salads sometimes!

      What?? Chocolate lentil porridge? I need to google that one! I love trying things that are out of the box and unexpected. Like I love black bean brownies! Who would have thought.
