meatless monday calls for maple marinated tempeh. say THAT ten times fast.
ahh, monday. before the recipe i’ll want to briefly touch on the weekend. thank you, thank you, thank you to all who wished me a happy birthday both via social media + in real life, ha. i appreciate each one of you whether i’ve known you all 24 years or just virtually for a few days.
i shared something about myself on instagram. find the post here. it was about the difference in how i spent last birthday versus this most recent. i spilled some details that were really difficult, but it was so accepted. it’s certainly not easy to share that last year on my birthday i was feeling my lowest of lows mentally . but it fills my heart to see people be so kind + accepting. when others share something that is difficult, respond with kindness + compassion. many comments resonated with me. particularly ones about how how the “weaknesses” + hard experiences i have gone through are actually a source of strength + examples my resilience. wow, thank you for acknowledging that. it means the world. if you’re interested in more about what led me to blogging, healthy eating + yoga check out my about page.
i attended The Gratitude Tour with Rachel Brathen on saturday. woah. not only a celebrity (in my eyes) experience, but an amazing class all around. imagine 500 yogis standing together in warrior 3, lifting each other up. connecting with a neighbor you’d never met, yet sharing an unforgettable experience. i i left feeling love, feeling gratitude, feeling uplifted + inspired.
fitting to be blogging about this on MLK day, i suppose. what i wish for all of you is to love more. love yourself more. love others more. love with everything you have.

meatless monday. it’s here again, + i think it’s a perfect reason to try new meatless recipes. salads are great + all, especially the kale variety, but i think this new take on tempeh will leave you feeling super satisfied.
lately my love for tempeh has been serious. example, tempeh bacon cobb salad. when cooked well, meatless can still be so damn delicious.
this maple balsamic marinade flavors the tempeh, then it is baked to crispy perfection. i added garlic sautéed spinach. but you could also pair it with roasted veggies or seasoned potatoes for a meat + potato kind of meal. but one that is gluten free, dairy free, simple + vegan!
- 1 package of tempeh (i use original rather than 3 grain for this recipe)
- 1 tbsp extra virgin olive oil
- 1 tbsp garlic minced
- 2 tbsp real maple syrup
- 4 tbsp balsamic vinegar
- 1 tsp agave nectar
- cut tempeh into thin slices- about 14-16
- pour marinade ingredients into a bowl + whisk
- add to a large ziploc bag + add tempeh pieces.
- allow to marinate for at least 2 hours or ideally overnight. turn bag occasionally in fridge, allowing tempeh to be completely covered on both sides.
- once ready, preheat oven to 350 degrees.
- pour tempeh + marinade into baking dish.
- bake for fifteen minutes.
- flip tempeh pieces + bake an additional 15-25 minutes.
