Balsamic Brussels Sprouts with Brown Rice, Pecans and Cranberries

  • 2 tablespoons extra virgin olive oil
  • 2 cups brussels sprouts, halved
  • 3 tablespoons balsamic glaze/ reduction
  • 1 tablespoon Himalayan pink sea salt
  • pepper, to taste
  • 1 cup brown rice, prepared
  • 1/2 cup pecans, chopped
  • 1/2 cup dried cranberries


  1. First prepare brown rice and set aside. Heat oil over medium-high. Add brussels sprouts and season with salt and pepper. Cook, stirring frequently, until caramelized, 8 to 10 minutes. Add balsamic glaze and 1/4 cup water to pan and cook until evaporated, about 2 minutes, stirring to coat the brussels sprouts. Remove from heat, and add to a bowl. Add brown rice, pecans and cranberries to bowl and toss all ingredients well to combine. Add additional salt, pepper, or balsamic glaze to your liking.
