vegan caesar dressing // made with cashews!

all hail this vegan caesar dressing. 

ceasar salads were always the forbidden fruit of the menu, for me. even before giving up dairy, I would want to order them, they are so delicious…

…but I knew it was just NOT the best choice.

well guys, there no more diner’s remorse. 

you can enjoy this version, guilt free, and impress some dinner guests who totally didn’t expect their starter salad to be this good. this salad dressing is tangy, garlicky, creamy, briny, and just plain delicious. 

using cashews and a high speed blender, I was able to come up with correct combo and ratio of ingredients to finally get vegan caesar dressing just right. 

no soaking necessary.

so often, when cooking with cashews as a dairy replacement, you need to soak them for hours prior. sometimes you just want the dressing… NOW. I get that. soaking is truly not necessary here. if you have a heavy duty high speed blender, such as a Vitamix, it will turn out perfectly. 

however, if using a less powerful blender, perhaps soak for 1 hour prior to blending for the best results.

I chose to serve my vegan caesar dressing on a less traditional bed of ingredients (mostly because of what was available in my fridge) but the crisp romaine, red onion, creamy avocado, and crunchy cucumber worked perfectly. I also love capers. I used to be a seafood fanatic- so their salty ocean-y taste is perfect. and far less gross than anchovies….

for another kick of protein, you can also try using roasted chickpeas as croutons. or could always substitute the romaine for kale.

1 blender 


Dairy Free Vegan Caesar Dressing
  1. 1/4 cup raw cashews
  2. 1 tbsp. extra virgin olive oil
  3. 1 tbsp. apple cider vinegar
  4. 1 tbsp. nutritional yeast
  5. 1 tbsp. lemon juice
  6. 1 clove garlic
  7. 1/4 tsp. sea salt
  8. 3 tbsp. water + more to thin if necessary
  9. optional: 1 tsp. capers
  1. add all ingredients to a high speed blender.
  2. blend on high for 2-3 minutes.
  3. add water to thin if needed, scrap sides, and blend again for 1-2 minutes.
  4. serve immediately.
  5. store in the fridge for up to 3 days after in air tight container.
